Add Flavor to Turkey by Wrapping in Bacon

Wrapping a turkey in bacon has been a little secret of mine for years, and now its in “style.” Preparation is very simple: use as much (or little) bacon as you like. If its a large bird you might want to add it on the last hour and a half so it doesn’t burn, depending on your roasting temperature.

Try it this year and let me know how it turns out. Of course, if you want someone to cook your entire Thanksgiving dinner for you, call me!

Holiday Tips from Keith Hand

Preparing for Thanksgiving Day: Plan Ahead

  • All Frozen Turkeys should be purchased soon so you’ll have plenty of time to thaw your bird. Fresh birds should be bought by Tuesday.
  • Beverage plans and purchases can be completed now. Your general menu should be written for Thursday with a rough prep timeline.
  • Begin to buy dry and non perishable ingredients.
  • Maybe you have one main item provided by the caterer or you pick it up from a specialty shop and then you provide the side items to embellish that item.
  • Cleaning the house and yard work should be wrapped up this weekend as next week will move very fast.

Christmas is Coming!

  • The first Live Christmas Trees have begun to show up at the markets. We have several that we are decorating for clients and we are waiting until the week after Thanksgiving to put those into stands. I am cutting one particular live tree and I will keep you posted as that progresses in a few weeks.
  • Your preliminary holiday decorations plans should be in place for before or after Thanksgiving, and any catering floral or special order products should be secured as soon as possible.

Persimmons are in and they are beautiful

A couple of ideas that we are doing at Bridge Catering this week with persimmons are:

Freeze your Persimmons before using to get rid of the tannins… It works and it heightens the natural glucose… Persimmons are also great as a garnish!
